With Father’s Day arriving just as summer is about to begin, it’s the perfect excuse to dust off the barbecue, enjoy the longer evenings, and gather for good food and great company. Simple, fresh, and on the table in no time - this potato salad is a brilliant make-ahead side, with just a handful of ingredients and lots of flavour.
METHOD:
Boil the potatoes until soft, then drain and let them cool slightly.
Mix the mayo and mustard in a large bowl, then stir in the chopped chives.
Add the warm potatoes, season well, and gently mix until coated. Serve warm or pop in the fridge until needed.
A delicious twist on a classic, this creamy coleslaw is the perfect partner to grilled meats, veggie kebabs or even tucked into a bun with sausages.
METHOD:
1. Remove any outer cabbage leaves that are a little tired, then halve and core. Finely shred the cabbage and tip into a large bowl.
2. Grate the carrots and apple, finely slice the onion, and add them to the bowl. Grate or crumble in the cheese and stir through a handful of chopped herbs if you have them.
3. In a jug, whisk together the mustard, mayonnaise, yogurt and vinegar. Season to taste, then pour over the vegetables and mix well.
4. Sprinkle with a little paprika and serve straight away or pop it in the fridge until you’re ready. It keeps well for up to 3 days - just make sure to keep it covered in the fridge and give it a stir before serving.
A vibrant and summery dish with just four main ingredients. You can grill the corn on the BBQ or use a griddle pan indoors.
METHOD:
Lightly oil the corn and grill until charred in places, turning often.
Slice the kernels off the cob and tip into a bowl.
Crumble in the feta, squeeze over the lime juice, and stir through the herbs. That’s it!
